Well Don and I just spent 2 full days racking the wine and acid balancing. The infusion spirals have been removed and we were happy to see more color in the wine. The broken spirals make great smoker chips, by the way. May have to market these. Next year we'll probably use a bigger crew so we can pump and clean at the same time. Each year we get at least one new idea to make things go better.
All the leaves have fallen, just dry canes left, gopher wars continue, and the 2011 won a Bronze in the SF Chronicle Wine Competition!!!!
